If there is a 'Scheme' option, set it to GUID Partition Map. Open Disk Utility by using Spotlight Search (CMD + Space) or by opening Finder > Applications > Utilities > Disk Utility app. Make up a name for your drive, and make sure the format is set to Mac OS Extended (Journaled) or APFS. It is compatible with macOS 12/11/10.15/10.14/10.13/10.12 and OS X 10.11/10.10/10.9/10.8/10.7 and works fine on M1, M1 Pro, and M1 Max Mac. Use disk utilities from the Mac OS installer to format the new drive in a Mac format. If you are installing a mechanical drive or if your device doesnt officially support the newer OS, leave the format as Mac OS Extended. On the next screen, select Virtual Hard Disk, then set the disk size to a minimum of 50GB, but ideally more if you can spare the space. Open Disk Utility from the recovery menu, select your drive, and click the Erase button toward the top of the Disk Utility window. If you are installing an SSD, choose the APFS format. If device is a (partition map-bearing) whole disk, then the new partition will automatically be placed last in the map. You always want to use the tools for the OS you are installing. When erasing the SSD make sure to select the physical drive and erase it as GUID partition and MacOS Extended (Journaled) using Disk Utility.
